Pasta Alfredo with Grana Padano PDO Cheese

Ingredients
5 tablespoons unsalted butter, softened
1 cup finely grated Grana Padano PDO cheese
Salt and pepper to taste
1 pound fettuccine or tagliatelle pasta
Directions
Cook the pasta in salted boiling water until just under the end of the cooking time. Reserve 1 cup of pasta water; strain pasta,
Transfer pasta to a heatproof bowl or tray, Toss with the softened butter, then add a ladle of pasta water and the Grana Padano cheese. Start mixing slowly and build some momentum. What looks like a watery mess will soon start to come together as the gentle remaining heat of the water will melt the cheese and butter and create a creamy emulsion.
Season with salt and pepper to taste.
Makes 4 servings.
