Cauliflower “Gnocchi” with Prosciutto di Parma PDO and Spinach

Ingredients
2 slices Prosciutto di Parma PDO, cut in half
1 bag Trader Joe’s Cauliflower Gnocchi
2 tablespoons butter
2 garlic cloves, sliced
1 thyme sprig
5 ounces spinach
Salt, to taste
Directions
In a nonstick skillet over medium heat, place prosciutto. Cook until dark red, turning halfway through, 2-3 minutes.
Remove to cutting board; cool and allow it to get crispy.
Return skillet over medium heat; add gnocchi and ¼ cup water. Cover and cook until water has evaporated, about 5 minutes. Add butter, garlic and thyme; stir to combine.
Cook gnocchi, undisturbed, until one side is golden brown, 4- 5 minutes.
Add spinach and salt; cover 1 minute. Stir and discard thyme. Remove gnocchi to serving plates and garnish with crisped prosciutto.
Serves two.
