Couscous Salad with Pesto, Arugula and Prosciutto di Parma PDO

Ingredients
2 cups pearled couscous, cooked according to package instructions
¼ cup store bought pesto
¼ cup chopped pistachios
2 ounces goat cheese, crumbled
2 ounces (4 slices) Prosciutto di Parma
4 cups/large handfuls arugula
Salt and pepper to taste
Directions
In a large bowl, combine couscous with pesto, pistachios and goat cheese. Season with salt and pepper to taste.
Add arugula and prosciutto and stir to combine.
Transfer to a serving bowl.
Yield: 4 servings
