Prosciutto di Parma PDO Chopped Salad Sandwich

Ingredients
FOR THE SANDWICH:
2 6 inch loaves Italian bread
1/3 head iceberg lettuce, chopped
½ cup chopped roasted red peppers
½ cup chopped pepperoncini peppers
¼ cup finely chopped red onion
¼ cup mayonaisse
12 slices fresh mozzarella cheese
1 pound Prosciutto di Parma
FOR THE DRESSING:
¼ cup mayonnaise
3 tablespoons red wine vinegar
1 teaspoons dried oregano
Salt and pepper to taste
Directions
Transfer chopped lettuce to a large bowl. In a medium bowl, with a whisk, combine mayonnaise, red wine vinegar, oregano and salt and pepper. Pour dressing over salad and toss until coated.
Add roasted red peppers, pepperoncini peppers and red onion.
Assemble your sandwiches: Slice bread in half lengthwise. Spread mayonnaise onto each half (2 tablespoons per sandwich). Layer 6 slices mozzarella cheese onto each loaf of bread. Top each with half the salad mixture. Layer slices of Prosciutto di Parma on top. Serve immediately
Yield: 2-6 inch sandwiches (4-6 servings)
