Toasted Orzo with Prosciutto di Parma PDO and Peas

Ingredients
2 tablespoons olive oil
8 oz orzo (1 cup)
1 garlic clove, minced
¾ teaspoon salt
1-½ cups water
½ cup frozen peas, thawed
¾ cup grated Grana Padano PDO cheese
2 tablespoons heavy cream
2 oz Prosciutto di Parma PDO, roughly chopped
Directions
In a medium saucepan, heat oil over medium-high. Add orzo and garlic, cook and stir until orzo is golden brown, about 5 minutes. Add water, bring to a boil.
Reduce to a simmer and
cover; cook 10 minutes. Remove orzo from heat.
Stir in peas , cheese, heavy cream and prosciutto. Serve immediately.
Serves two.
